what do stick and leaf bugs eat?

Your safer bet may be bramble or rose leaves.

When I had stick bugs, I fed them romaine lettuce and they loved it.

When I kept them, I fed them rose. I am guessing they would also eat sassafras leaf, because I collected most of the young ones from the tree

When raspberry and rose leaves were not available my Vietnamese sticks nibbled leaves from my African violets.
They also accepted small portions of fruitfly pupae that I had frozen and thawed.
Perhaps other species would sample the above...?
Perhaps they are not strict vegetarians...?
