Can you over feed Scorpion or they will refuse or stop eating when they full?

No you can't overfeed, it should stop taking meals, you don't want it to be massively fat though, post some pics.

It's pretty chunky, I'd dial back on the feeding, either half the prey size or double the time between feeding.
What's the species?
Just my opinion but regardless of species I wouldn't be keeping it on whatever that substrate is.
For more arid species I use excavator clay it takes a while to setup an enclosure with drying times, but looks great.
For the forest scorpions I use plain top soil, not mixed so it's quite firm, holds moisture great.
