Murderous Dwarf Crayfish!

Well, if clams get sick and die, their remains poison the tank. They're buried most of the time, so it'd be hard to tell.

I'm leaning toward cinnamon dwarf gouramis. Big enough to defend themselves, small and peaceful enough not to eat crays, upper and middle water column dwellers, fascinating behavior in and of themselves with maybe four individuals, breathtakingly attractive, complementary color for tank and orange crays. Don't anybody say anything bad about this choice! I don't think I could take it!

Ok, come to think of it, go ahead and let me know if you have reservations based in experience. But I honestly think I've got it nailed. These guys are great neighbors, they mostly poke at each other, and I've never had one show any interest in crayfish. I may get an occasional nipped tail, but that would be it. I'm convinced of this. I got my first aquarium when I was 10, and that was 43 years ago. You can speak from experience, but don't guess! Otherwise I'll just cry some more. It's pathetic to see a middle-aged school marm weeping openly over a fish tank!

I'm very sorry. Crayfish couldn't eat the Gouramis normally, but might attack when they are sleeping. Or, the Gouramis might attack the Crayfish while its moulting.

Bottom line: just don't get a Dwarf Cray OR normal Cray tankmates in my opinion. Fish and Crayfish just don't mix. Like, you go ahead and do what you want, but if you ask my opinion I wouldn't do it.
