How do you change an OW tarantula's water dish?

Tongs,my sprayers have a long wand that's helpful especially with mm that are extra skittish. And I do the watering and other maintenance in the daytime only feeding in the early morning hours. That's probably the shortest way I could put it.

Wait for an opportune time during the Day, when the "Coast is Clear"

Feed before ... Arachnid is occupied ... Maintenance is easier

Very carefully. For fillings, I just use a blunt tip syringe. For full changes I do something similar to Kada, but with other acrylic lids, so I can still see the spider. I place another lid on top of the one I’m opening, so the resulting spot for my tongs is small. The safest bet is cupping them and then doing all the maintenance you need to.
