My girlfriend likes our scorpion but after watching her eat a cricket she thought it was horrifying and is afraid she’ll pinch one of us and use her mouth parts (rather than her stinger) to hurt us. Ive never heard of it nor have I found anything online of this ever happening. So now I ask the community, have any of you ever had your scorpion use their chelicerae to hurt you or mistake you as food?

99% of scorpion attacks I've ever heard of was from people getting stuck.

To be fair, the hobby does seem eccentric to people that aren't knowledgeable about these creatures, and I'm sure I can understand how the mouthparts may freak people out, as they do seem quite abnormal and alien-like in comparison to other pets/ animals.

Understandable. People take an animal out of it's natural environment and put it on display then note a certain rather small piece of it's anatomy functions in a way that make some people feel uncomfortable.
Meanwhile, roughly over 1 billion people have exposed themselves to the Alien movie franchise voluntarily, many on multiple occasions, though the review of the franchise was " It was well-received for its action, but some reviewers were critical of the intensity of some scenes."
For myself, from the perspective of a professional emergency services responder, I find powered wood working tools and the havoc they inflict on the human body on practically a daily basis up at the top of the list followed closely by searching accident scenes for body parts quite a great distance farther up the \Intensity' scale above certain arachnid natural body functions.
Don't like it? Don't look. Unless it's your job. Can't handle it, get a different job.... or pet.

Apologies freely and honestly extended if I offend.

The pinchers are to grab stuff and bring it to it's mouth. The mouth has plenty of hair and is quite sensitive, i don't really see the. using it for defense.

What happens is if the scorpion see's you as food. Very unlikely to happen.

I die see some spiders drinking drops from skin and accidentally bite.

So if you want to get your scorpion trying to eat you, cover your fingers with sugar or put waterdrops on you.

I have had P. dictator try to pull hair off of the back of my hand with their chelae and "chew" it with their chelicerae. But unless you're girlfriend has hairy neanderthal hands like I do, I doubt it will be an issue for her.

Defensive behaviors will consist of punching and/or stinging. Typically once they're placed on your hand they don't really distinguish it from any other surface.
