My deathstalker hasn't eaten in over a week. Is this normal? Since it's a desert species, I thought they may be able to go longer.

Not sure how much you are feeding it, but a week between feedings is pretty standard, no need to feed more often than that. They can go months without eating.

scorps can go a really long time without food but it's strange that an Lq isn't eating all of mines were VERY hardy eaters. What instart is it, it might just be ready to molt.

When I arrived this afternoon, my deathstalker was stiff. He could move around a little bit, but not much. I am really worried now. What to do???

It seems odd to me that someone who has a deathstalker scorp would not have the experience to answer this question themselves. Shouldn't you have some experience before you get one of these guys? This is the infamous deathstalker, most venomous of all scorpions scorpion, right?

I mean, for tarantulas, guys are always recommending not getting aggressive species for beginners yet no tarantula is likely to kill you.
