I literally just got this little guy this morning. He seemed fine at first. Later on it looked like he was trying to sting the air/himself and now he's on his back not moving. Is it dead? Is it something I did ? Molting?

It reacts to touch a little bit mostly just curling the tail. But otherwise almost 0 activity.

Did you get it shipped to you? It might have been weakened and stressed from shipping.

Another option could be contaminated substrate. Sometimes there is residu of pesticides or other chemicals in coco fiber. It’s rare, but I’ve had it happen once. The scorplings were laying on their back twitching. About half of them recovered when I put them on new substrate from another batch.

It certainly sounds like some sort of poisoning, either by aerosol, or as Joey says bad substrate.
Change out the substrate, and provide a couple of low hides that it will feel safe under.
This species prefers it a lot cooler than other scorpions.18/22 Cent. range.
When you have sorted this, leave well alone, it will come out when it's ready, not before.

Update, unfortunately it died. As it happened within hours after shipping the seller will be replacing it. I had an enclosure set up for it but I was worried it was too large and that I would likely lose it and would be unable to track eating properly.

Do you reckon I could comfortably keep it in this set up? (I changed the substrate I used l from cocofibre to a mix that I have for tarantulas) there's also a small layer of vermiculite at the bottom.

Sorry about the little one.
When you receive the replacement open the outer packaging and allow the scorpions container to reach room temperature, only, over an hour or so, don't place the scorpion into a heated enclosure.
Also remove the Vermiculite from the substrate, it will mould like crazy when wet.
Dehydration doesn't make scorpions act the way yours was, did you wash out the tank with soap, or bleach, if so you need to re- rinse the tank with plenty of clean water.
