hmmm I think every collection should have at least one of the following;
Brachypelma smithi
Poecilotheria regalis
Avicularia versicolor
Brachypelma emilia
Grammostola pulchra
However being a brachy lover my opinion is going to be rather biased
At the end of the day I guess it just depends what species you prefer, whether you like arboreals or burrowers or even if you happen to love a certain genus. The above would be my *should have in every collection* list though!
Given that eventually we all tend to focus on a particular genus or type of tarantula, I'd say that there really isn't one or two "staple" spiders that everyone should have.
You get what appeals to you. Many would think of A. avicularia as a staple species, but even those who keep many different Avics may not care to keep one in their collection.
Your preferances may change as your collection grows, I used to think old world species were creepy looking with their long legs and strange markings, especially the arboreals. Now I find most of my new worlds boring and plain and I am adding more arboreals to my collection.
for a staple I would say
G.aureostriata and
A.avicularia
Looks like almost everybody is in agreement on G. Rosea, A. Avicularia, and B. Smithi, but I'd like to add:
Lasiodora Parahybana and/or Lasiodora Dificilis (Better looking IMO) and certainly a GBB and P. Murinus!;P

My choices are for any T's in the following groups, (I can only go by the ones I already own) would be definately an Avicularia of some type, a brachypelma, a grammastola, Chromatopelma (gbb) , aphonopelma, a poecilotheria, and a psalmopoeus. I might add more as I add experience with some of the groups I don't have yet.
I would say start out with some of the cheaper staple species, and go for a variety. Get a G. rosea or a B. smithi to experience NW terrestrials, an A. avic (docile nw arboreal), P. irminia or cambredgi (little faster and more defensive than an avic) a P. murinus (aggressive african baboon), a cobalt blue (evil pet hole ), and a P. regalis (classic asian arboreal).
Watch your collection, and see what you like and what grows on you, like Becca said. I feel like its much more rewarding to focus your collection on what you're really interested in, and try breeding or involving yourself in the hobby in some more specialized way.
The list goes on and on. Theres soooo many different choices it all depends on ones personal preference. I personally own all of these T's (plus MANY more). I love then all dearly and couldent live without them
All collectors must have a huge Therephosa blondi female, and then the species they want to have..
If you like asian tarantulas you get those and if you like new world arboreals you get those..
But every asian collector should have the so called "Lampropelma violaceopes", and ofcourse a huge crazy Haplopelma minax female
Also all Poecilotheria, and ofcourse Cyriopagopus schioedtei and also .... I could spend all day naming my favorites, but its up to everyone what their favorites are
