Got this WC desert huntsman exactly a week ago, “she” has a large abdomen and isnt interested in food what so ever. I have a heat mat to the side of the enclosure to make it a little warmer. What are the chances she’s gravid and not just fat? Any info would be helpful!

Looks very gravid. Huntsman, generally speaking; she will quit eating before making the egg sac and won't eat again until a few days after the spiderlings disperse.
She is probably looking for a safe haven to make the sac which she will carry locked in her chelicerae beneath her.

Is there any changes I should make to her enclosure? I’m very aware that the chance that she’ll eat it is very high but also want her to be as comfortable as possible.

Cerbalus sp. eggsacs are usually very hardy in captivity and hatch out fine without much adjusting to heat or humidity.

You will need to cover those vents with stockings once the baby's come, @Smotzer has just gotten baby's from one of these (he has pics in the media feed, ) tiny tiny sassy little baby's that will walk straight out those vents.

Cerbalus aravaensis / Desert huntsman indeed looks to be packing eggs.
Prepare for incoming.
