Does anyone work with husbandry of solitary wasps like Pepsis or
Sphex? I think quite a few of these would make great exhibit animals
but I'm having some trouble finding any information on care.

I'd imagine a large aquarium would be needed. Probably best to start with a gravid female and offering her flowers soaked with sugar water or another source of sugar she will accept. Then you need to figure out the host. Soil from outside will be the best bet for proper burrow construction

I think that blue mud daubers(which eat spiders), or steel blue cricket hunters would be the best species to start with, since their hosts seem relatively easy to come by.
