Lately my G. pulchra has developed a desire to dig deep into the substrate. I have seen it redistribute substrate around the tank, but never did it just dig really deep and then sit in the hole. I have about 2.5-3" of substrate (mix of coco husk and peat moss). Do I need to provide deeper substrate so it can dig or burrow?

When I first got my pulchra - a 3/4" sling - I created a burrow for him, with a cork-bark roof, and he took to it like a duck to water - and there he pretty much stayed until he outgrew it - I dubbed him Caveman. Anyway, you could try that - create a "burrow-with-a-view" against the glass (or plastic or whatever) so you can spy on him where he sits.

How big is she? 3 inches should be good, for a juvie and adult I think 6 inches is fair. But as long as its comfortable and it can hide it doesnt really matter.

Grammostola Pulchra tend to be opportunistic burrowers especially when finding a molting sanctuary as I put it.

With the above being said, I also would like to add that if your individual likes to dig you want the substrate to be about 2X the legspan of the tarantula.

It is a bit unnecessary to have more than 4"-5" of substrate in a terrestrial setup but, if it appears happy go for it.

Just a helpful opinion.

My pulchra is about 2.5" so about equal to the substrate. Maybe I'll add a couple inches of substrate and see what it does.
