Anyone have experience breeding lubbers or any other species of grasshopper? I'm mostly thinking about how to hatch the eggs (i.e. whether they need a dormancy period)...

I haven't bred lubbers yet (gonna try this year though!) but I have bred other grasshoppers. Most of the U.S. species can be hatched with a couple months of cool period, as long as their moisture requirements are met. Like, I've read that Romalea does best when it's constantly moist, whereas a lot of band-winged and spur-throated hoppers can't survive conditions like that.

I've seen them deposit eggs in my tanks a lot, but I've never had any hatches. I suspect I kept the soil much too dry. I wasn't trying to breed them. Here's a vid that shows them ovipositing, etc.:
