I caught this rather interesting guy walking down a dirt path. I believe it is a Longhorn beetle but I don't know what they eat. Other insects? Would they also eat fruit? Thanks in advance for any help on feeding it.

Most longhorn species eat sweet liquids like nectar or the juice from overripe fruit when adults. Most larvae eat wood. I don't think they live very long as adults, however.

I think that is a giant wood borer (Prionus sp.), which, as you said, is a type of longhorn beetle. maybe you can find more info on it under that name.
