I got an autumn leaf insect 2 weeks ago and I managed to get her to eat fine for a few days but she suddenly stopped eating and hasn't touched food in more than a week now (im feeding her bramble leaves).
She shows some moulting signs but it's been so long now and she hasn't made any progress.
She's still only a nymph about 2.5 inches long if that could suggest anything

Leaf insects need warm Humid enclosures with really GOOD ventilation.
If any of these drop they won't eat.

Also the normal size for your species is 6-10 cms so at 2.5 ins it's not far from fully grown.

Also they won't appreciate a skanky piece of cork bark in their enclosure, they need lots and lots of food plants placed in a water container for them to climb on and hide in during the day.

Make sure to keep it hydrated while it’s not eating. Important if it’s preparing for a molt, but even if it isn’t, these things consume a crap ton of water

Thank you so much for telling me this. What would you say is the best way to keep them hydrated? The humidity is quite high but I'm not sure if that helps much with hydration

misting directly with a sprayer works best

Thank you for the advice. I don't actually have any Cork bark in the enclosure it's all tree branches so that I can wedge the food plants in without them just lying on the floor. It's a planted tank to keep the humidity high so the only issue I can imagine here would be ventilation
