Hissers huddle close to each other all the time. I would say if your hissers start a mutiny and throw you out of the house, then the tank is overcrowded. :}

It is the males you have to worry about. If there are too many they fight for territory. This usually does not lead to any damage, but too many many males leads to constant battling, which in turn leads to legs and antennae being chewed off.
As for the carrying capacity of a 10G tank, I agree with Scott, wait for the mutiny.
I use odor as an indicator, if I start notice an odor I will move them to a larger enclosure. I am currently thinking of moving my colony (150+) to a 20L tank, as I have begun to notice a very slight ammonia like odor.

I started with one male and four females. The had a couple broods. Then just recently I purchased a breeding colony of 15 females, 5 males, and 40ish nymphs and juvies; I got tired of waiting, and I wanted to quit buying crickets. I now have a large number of gravid females dropping little grey nymphs every couple days. A female can have about 30 nymphs every 40 days, and they take about 6 months to mature.
