Situation where my crickets died and I haven't been able to go to the pet store to grab a few.
It's a Hoffmannius/Paravaejovis spinigerus and it has not been fed in around 11-12 days.

It should be fine. Scorpions have the ability to slow their metabolism to a third of that in similarly-sized insects. During lean times, the scorpions metabolic rate is the lowest of all invertebrates. At that pace, eating one insect can sustain a scorpion for up to a year. In order to turn down their metabolism, scorpions will simply engage in minimal activity.

That amount of time without food is in no way a detriment to a healthy scorpion.

Don't worry about it. Just feed it when you can.
