Giant islander roach

I just bought 2 of these for my terrarium in my first grade classroom. I gave them water and some rice ( all i had). They ate it all. Can you tell me what they should eat and how they react to temperature changes. The heat is not on in the school on weekends and I don't want them to die. The terrarium has ryegrass and alfalfa growing in it. Thank you so much for your help.
