giant centipedes

thinking bout getting one of these, are they in their burrows all the time?

most species stay burrow more than others. they'll come out at night to hunt.
I would recommend S. heros and its subspecies. S. subspinipes and S. alternan burrow a lot (from my experience anyway).
S. mutilan is a good species too. these are very active.
