There are many different kinds of mold and fungus that can adhere and proliferate in substrate such as peat moss.
The ones I encounter (and clean out) are tiny white balls (spores?) that gather towards the bottom of the peat. These sprout hair like protrusions.
Others are white silky fungi/mold that grow on top of very wet peat. I take a spoon and scrap it off, or just dump the whole thing.
Around water dishes you will sometimes find mold and such. It happens.
Try not to keep your peat TOO wet. This will cause mold and fungi to appear.
Tarantula silk laid down on the substrate can resemble white mold too if it is wet.
T poop of course are those creamy off white globs on the side of your enclosure. Avics are well known for their poop shoot episodes. I just take a hot wet rag and clean it off. At least my avics come out of their tube webs and poop, then go back inside and preen themselves.
