If not, do they go through sclerotization like tarantulas do, that I can check for on molts?

No, you can not mate female "true spiders" before their ultimate molt. See my reply in your other post for how to determine if a female is mature.

You can mate them but it won't be a successful mating.
Do true spiders buid unfertilized eggsacs when subadult? Yes, rarely they do.

What is the reaction of a sub adult female to a adult male?
Usually she goes into defensive mode, shows fangs or tries to scare away the male with hits to show she is not interested or just run off. Yet some females just accept the fate and wait until the male is done and let them be.

Will this result in a fertilited eggsac?
No.
