She has had three fat dubia roaches since the big event, and I think she looks bigger than she did at the actual time of copulation.
Is it too soon to be able to notice?

If she breeds again it likely wasn't a successful breeding the first time. If she shows no interest in the male or attacks him she likely has been successfully bred. It can commonly take 3-8 months for a sac to be laid. I'm guessing she is getting fatter because she has eggs developing inside her.That's kind of what I was thinking :8o ..... But I wanted to check anyway.
I've been leaving her alone, except to drop food in, and decided to look her over really good today.
On a side note, I've been looking for the male to build another sperm web. I left on vacation for a week, so there is no way to be sure he has or hasn't. I've been wanting to put him in again, I guess it couldn't hurt to do so, huh?
