I've been thinking of moving my adult female Mexican red knee from her 10 into a 20 long. Would this be too big?

If you design the layout too try and keep her in one place that might help, technically no cage is to big it's just the spider won't use it or it might start a burrow where you can't get easy access. As long as you know it's eating it should be fine.

thats alot of space to keep track of when making sure it eats or cleaning of the left overs

the 10 gal is a better choice....20 gal will just be wasted space
