So I have had my Hadrurus arizonensis since mid October of last year and it has only eaten twice to my knowledge. She is only a juvenile (2" minus the tail) and has a constant temperature of 80-83f. She is still quite chubby so I'm not sure what is going on.

sometimes scorpions just don't eat for a long time, that's what my Hadrurus arizonensis did, or she could be in premolt! :D

I wouldn't worry about it too much... It's true, scorpions can go months without eating

Many species of Scorpion eat even less frequently than Tarantulas. It is perfectly normal.

they also don't need feeding very often... once a week if that. Sometimes when you don't see them for weeks or even months they could be going through a hibernation period called diapause. With desert hairies if they look like they're due for a molt offer them a water bowl they can drink from - they need the hydration - and don't spray water on the walls of the enclosure.
