What Is This Bug?

About a month ago I noticed a black worm-like creature in the same plastic bag that a dozen small brown crickets came in. It looked like a rolly-polly but was longer and thinner and was quite animated, even spastic. I put it in a jar with some soil and a slice of potato and a Whisker Lickens cat treat. It seemed to be eating the cat treat more than the potato. I noticed that it had molted somewhat larger.

When I looked in on it again, it had turned into a whitish worm with vague brown markings and had bored a hole in the middle of a Whisker Lickens and was firmly stuck in there, with its tail sticking out. When I touched it it moved slightly.

When I checked it again, it had turned into a small active dark beetle which readily burrowed into the soil.

What is this insect? What does it eat, and what are its humidity requirements? When it was in the worm state, I tried to keep its environment moist, but created white fuzzy mold.

Sounds like it may be a species of Dermestid beetle.
