Juvies: 2" and/or have adult color.
Sub-adult:1-2 molts away from maturity
Adult: Mature, and usually ready to breed.
It's not a certain number, I go by average size. Plus, some tarantulas mature at earlier ages then we think. It's just a bunch of estimantes. If you bred and raised spiderling from an eggsac, you'd also know what instar they are at and such so you can go more accurately from there.
