Roach Colony - Where to put the heat?

I have just acquired a B. Dubia colony. I bought a ceramic heater and plan on setting it up like Shelob did on page 10 of this great thread:

My question: Should the heater go over the cork hides or over the empty area with the food. My inclination is over the hides as heat over the food will promote mold growth. Is this logic sound?
