Any ideas what this is, how it got there, or what I should do about it? I thought pure peat should resist fungal growths? Is it something I should worry about?

That's most definately Fungus//Mold. Likely fourishing off any internal juices of deceased prey to your scorpions. Perhaps droppings from your scorpion or even crickets. Some odd rotting plant or insect part ground in from the (processing?) plant may even be the cause. Though, peat does contain tannic acid; it only retards some of the nasties growth. Super high humidity required for Pandinus and Heterometrus sp. sparks up the growth as well.

remedy: change out your substrate with some fresh peat and be sure to remove all left over cricket(s).
