I was watching one of my millipedes, she'd just started climbing a fake plant and then she fell over on her side and her torso quickly convulsed. Not like curling up, it was really quick and jerky. She got back up but like a half second later it happened again. After that she just went back to normal behavior.

Nothing had changed in like, two hours. Two hours ago I misted them. Anyway, what should I do?

They make sudden jerky movements when disturbed. It's a way to distract predators. From the millipede's perspective, she doesn't understand why she was knocked down, so she'll react as though there's a predator. As to why she fell, if this plant is made of plastic, she won't be able to grip it properly.
