I would like something that survives at room temperature and lives in sand

6 eyed sand spider? They're pretty neat. I'm not too savvy on care but they do live in sand and I'm fairly certain room temp is what they need.

A pet rock. They come in a variety of Colors and sizes, they can also go a VERY long time without food. Also any temp works.

But in all seriousness, I'm sure their are some beetles that can live on sand, i.e. Egyptian predatory beetles and maybe death feigning beetles, not too sure about the temps but check them out :)

Just keep in mind that a bite might not be too great. They aren't known to be super defensive or anything though so as long as you are responsible you should be fine.
