I caught a scorpion. Can someone ID? Also, care?

Crickets do molt, and that is probably what you found the second time. When a tarantula eats a cricket they will leave behind a little crusty ball of leftovers (called a bolus) that is not remotely cricket shaped. When a scorpion eats, they mash things up alot more and it's not uncommon to find the occasional bit that has fallen off during their meal...usually legs. So it's quite possible that your new gal had eaten the rest of that first one you found.
