I betta your betta against my betta

So my girlfriend has taken to bettas and has some beautiful various variaties males and females, (crowntails kings or some other such)
and she would like to begin breeding them just as I do with spiders however, after a few websites and books there are a few questions going on.

1) Are the various "breeds" nothing more then selective morpsh and interbreedable?

2) whats the best way to sex male from female other then fins as I have seen some small finned males, the ovipositor? (also have a female that flairs her gills)

Most bettas are the same thing, Betta splendens. There are some species of bettas (just because the non-splendens are so cool: http://www.aquaticcommunity.com/bettafish/species.php) that you won't find in pet stores, you have to actually find other hobbyist to get.
