Is it safe to use Gorilla brand 5 minute epoxy to build a tarantula/other invert enclosure? I've been wanting to do it for quite a while, but I;m not really sure how to go about doing it.

I don't know Gorilla brand 5 minute epoxy, but I've already worked with epoxy resin. When it's completely dried out, it's safe. Rather, the problem is that you have to be very careful when handling it. This stuff is cancerous and shouldn't touch your skin! Unfortunately, I don't know whether this also applies to your preparation. I covered 3 prints with it. I would use silicone or Pattex 100% to glue an enclosure. Of course, both also have to dry for 24 hours.

for acrylic I use IPS Weld On products. Either Weld on 4, or 40 most of the time. If your fitting isn't perfect, Weld On 16.
