I will be getting my baby Emps tomorrow, do you think this would be ok for 2 approx inch long scorpilings?

Its about 8inch by 6 inch.

I keep two in a 4x4inch container with a shallow sub...just use man made hides and it works just as good...if you give them too much substrate they will kill a cricket, drag into hole eat it and then you will have a big problem with leftovers :-/

I have several (read as full broods) in tanks with shallow sub. I just provide plenty of hides. i do this for the exact reason tabor mentioned. They drag food into a burrow, don't finiush it and then you have a mite explosion to deal with.

Substrate is about an inch deep, then theres some gravel on the very bottom as I read somewhere its a good idea to help humidity.
