I got both from a garden, and I know they aren't using any pesticides or anything + I've found lots and lots of baby millipedes of the same species crawling around in the soil, but I wanted to make sure before I put them in my millipedes tank :3

You answered your own question, to be safe probably try one or the other I would pick sunflower over rhubarb.

No need for rhubarb, excepting pies of course.

Would they be invert safe then? Just curious
I would not know. My point is that too many people make an assumption or comment it's safe for X, (often humans). This leads some OPs to think it is safe for Y (their pet), and w/out actual knowledge or data presented, it's a claim and nothing more. It's not helpful.

Hmm. There is a sunflower borer, Papaipema rigida, a sunflower beetle, Calligrapha exclamationis, quite a few species of ants. Looking more like is there anything that doesn't like munching sunflower leaves?

Random web search quotes

The most common pests that eat sunflower leaves are squirrels, deer, rabbits, mice, voles, chipmunks, finches, aphids, weevils, beetles, caterpillars, grasshoppers, bees, ants, etc.

Cutworms:
These pests feast on leaves at night, hiding in the soil by day.
Beetles: Visible shotholes in leaves are a clue they’re around.
Grasshoppers and Caterpillars: Voracious eaters, they can defoliate a plant quickly.
Aphids: They suck sap and can spread disease.
Slugs and Snails: Look for irregular holes and slimy trails.
Birds and Animals: Finches, deer, squirrels, and rabbits can also damage leaves.
