When taking temperatures... Which is more important?

The temperature in the air, or temperature of the surface?

EX. My roach bin's surface remains at at about 85 degrees. But the air temperature remains room.

Same with Vinegaroon temps, using a UTH on the side, substrate near the pad gets 85, but otherwise room temperatures.

These two are in my bedroom, which is why I haven't placed the entire room at 80+

What I'm trying to say is which temperature should I pay attention to? The probe (I assume measures the warmth of the air.) or the temp gun(I'm assuming takes the temperature of the item it's pointed at.)?
