What kind of permits do pet stores need to sell what animals, particularly exotics? How would I find out about this for way-in-the-future reference?

It depends greatly on your particular state and county as well as city ordinances. Best bet as suggested go to FWS and look up your area.

Yeah, you'll need a permit, and individual permits for distributing most animals, such as Hedgehogs.

Local Fish & Game generally only handle native speciess. USDA handles many exotic species, mammals and some birds. FDA regulates some animals, CDC has their own regulations... as well as the local health department can have a say too. Lots of random agencies to make sure you're in line with.
