And yes, some species will eat alot and won't stop eating. They will become fatter and fatter.

If you have curiosity about the overfeeding until they burst thing, no, this is a myth. I have never seen the death of an "overfed" scorpion, less caused by something obvious, other than "overfeeding", but I have seen the death of a scorpion(s) that could not, or would not eat (never have they been fat).
