Normally i see her digging and pretty active. Is she molting or will i rarely see her now that she's content with her burrows?

It's pretty common for them to disappear for a while. Likely hunkered down and getting ready to molt.

In the late fall through winter, vinegaroons burrow underground and become inactive. This is likely because they are molting or getting ready to molt because they time the molts with the seasons to an extent (at least when they get larger and are only molting once a year).

Thank you! She was the first arachnid i purchased after getting my collection stolen. I was really worried about her after she was super active.

They can go through long dormancy periods, especially if about to molt. I had one go under when gravid in early Fall, it had babies there and overwintered with the babies until Spring. That one was under 9 months.
