How long do T's hold the eggs before laying a sac? I have heard everything from a month to a year. Does it vary with genus/species?

Yes, it varies from species to species. This thread would be better in the 'tarantula questions and discussions' forum.

Also, it's called a gestation period.

It's probably also dependant heavily on the environment (how often they are fed, how hot, how humid, how much commotion there is nearby).

Also-Does anyone know any links or bits of reading on how longs different species hold eggs for?

You could probably check the breeding reports and get some pretty good data from there.
