So, I would think that he's in premolt, but he still wants food. Been feeding him medium crickets 3 times a week. Should I cut that down? Finger in picture for scale.

I wouldn't really feed him anymore, even if he wants to eat, I wouldn't let him eat anymore until he molts.

Ok I see. I'm afraid he 'doesn't' want to molt though, he's very active for a scorpion. How long can they go before they starve?

What scorpion is it?? It depends on the species of scorpions. Some scorpions take forever to molt, and I mean glacial slow.

Just give it a while, there's no exact time when emperors will molt. But they mostly grow and molt at a normal pace, so no worries.
