Keep feeding and caring for them. Also remember that females will not grow at the same rate as males. Plus each T is unique, some just grow slower than others. Also could be a genetic factor. That's why there are so many eggs in each sac, some just die off and there is nothing you can do.

Setup looks fine, but I would put ventilation holes around the side. Cross - ventilation is better than just top ventilation.

If it is really damp, then I would switch it out. But any new coco fiber should be moistened first or else it is really "fluffy" to start. Either way the sub will be moist for a bit. If the current sub is only moist, then I would just let it dry on it's own

Yes, you are over-thinking.
Just keep the T's at room temp and keep the water dish full. If you want higher humidity, just overflow the water dish.

What species are we talking about? Unless it is a swamp dweller, a full water dish should suffice for maintaining humidity as well as allowing it to drink.
