Drinking water is a very good sign. If she is refusing to each mealworms try switching it up a little. Maybe some crickets or roaches, she might be more inclined to go after something that moves more then a mealworm. If she still refuses to eat, there is a good chance she is going to molt...
If you have done the research and feel comfortable taking on the challenge, I say go for it. Only you know when you're ready and no one can tell you not to because they don't think you're ready. Also there is nothing wrong with wanting a T because it is blue. Lets be honest the blues ones are...
If you're worried about her not eating just crush a pinhead and stick it at the opening of her web nest. Leave it there over night, If she is hungry she will eat it. If not its completely normal for Ts to go on hunger strikes. Could mean she is about to molt or it could mean she is not hungry...
Its that time of the year again. Its been about 343 days since the last molt.
I feel I know my tarantulas behaviors pretty well, and was aware she was in pre-molt for a couple weeks now.

This doesn't look like a death curl to me. You can see at least four legs sticking out away from the carapace. Looks like your T is just laying on its side, or molting. I cant tell from these pictures.
I had the same problem with Avic slings. They were doing fine one day, eating and drinking. Then they just die. Had another one have a bad molt. I've heard Avic slings are not the easiest to keep alive.

First of all congrats. I think it is awesome that you bought a T, to try and get over your fear of spiders. If only more people would take this route. Tarantulas are amazing little creatures.
Both great choices, I myself want a G. pulchra, they're just so black. Maybe because I already have a MF B.smithi. For you I suggest getting a B. smithi first, or both.
Everyone should have a B. smithi IMHO.
