Leave the sac with mom for about 30 days. After that, if you wish, you can self-incubate them to lower the risk of mom eating them. To do that, you will have to make a home-made incubator (easy to make) and roll the sac a few times a day. Search around the forums for instructions to do an incubator.
When you said her tank wont suffice for when she's older, did you mean the current tank? It appears to be a fine size to me. And as the others said, add about 8 inches+ of substrate when you can to the tank. Secondly, it's not uncommon for tarantulas to fast for a few weeks, so don't worry, it...
Why do you want to feed a bird? Even if it is "cool" to see a giant spider attack and eat something, you should be over it with feeding crickets and the like by now. I don't even get it, what's so different then feeder insects? the fact that it's larger and has fur and has the potential to hurt...

G. rosea is often comfortable being in the open. A. seemani varies, mine was always out, other hide all the time in burrows or hides. I wouldn't complain.
I guess this would be a good thread for members to inquire how to pronounce a few names. Here is my list I am unclear of(I'll list a species and how I assume it's pronounced, then someone can correct them):
1) Chromatopelma Cyaneopubescens: "Chrome-a-ta-pell-mah Sigh-an-neo-pube-escence" ...
