Yeah, you just want to mist the sides of the enclosure so it has the droplets to drink. The substrate itself should be dry. When it gets bigger and has a larger water dish, you wont have to worry about the misting.
You can add a bottle cap. But a 1" Brachypelma is just going to flip it, fill it with dirt, and bury it. So you can try, but make sure you mist the sides of the enclosure every few days also.
A small Kritter Keeper or large deli cup would be great for a 1" curly hair.
Be generous with the substrate, because they love to move it all around at that size. Good luck with your new spider!

A vendor sells these at local shows, but people have said they can be tricky to keep, so I never took the plunge.
IME, G. pulchripes do what they want to do, decorate how they want to decorate, etc. I dont think you stressed him out, no. I think that he is still getting adjusted to the new digs.
I will say that with mine, the older they get, the less likely they are to actually burrow. My bigger ones...
I'm betting the substrate is too moist, too. I have had them web in a semi-arboreal manner until the substrate was to their liking. Starting a burrow was a great thing to do. I bet he'll go for it once it dries out some.
