I use a mix, but I layer it. Usually a layer of vermiculite on the bottom covered by a thicker layer of peat moss. Works good for me.
I wouldn't worry about your T trying to eat vermiculite... lol..
Unnecessary risk in my opinion, but you're free to make your own choice!

Some people use turkey basters or syringes to inject water beneath the surface of the subtrate effectively increasing humidity without promoting surface mold. Maybe it would work for you too?

Depends how big the sling is, it might not eat all that much, or, its not hungry, or maybe its in premolt and kills the cricket and leaves it for that reason.
If you feed him one cricket a week its fine. If you feed him three crickets a week its fine. If you feed him two crickets a week its fine.
It all depends on if you're trying to power feed and how beastly your tarantula is for food. Some will eat more than others, so judge it accordingly.
