Yes, they will take freshly killed food. I used to just pinch off cricket drumsticks (back legs) or cut other parts of bugs and just hand them to em with tweezers.
If they didn’t take it I just left them in there for them to scavenge and removed what was left after a day.
Not a problem for either, I keep my spiders and birds in the same room. A single tarantulas hairs aren’t going to affect your birds unless you’re literally making it kick them into its immediate vicinity.
The only issues I’ve encountered are having to wipe down/clean enclosures more often...
Not a mature male.
So, it could be tapping for a perceived male (assuming its female) but I’ve found some of mine tap after/during grooming too.
Also, sometimes when they get spooked, they run up and down really quickly which can also sort of sound like tapping.
Do you know how to tell if it's a mature male?
If not, do you have pics of him from before that might show his palps or front legs clearly?

An adult would do well in the large or extra large, if they are furnished properly. You could even swing a medium too. It depends on you how much space you are willing to let her take up.
I keep my big female in a 12x12x12 enclosure; it's more than enough space.

Nothing else you can do really, not knowing exactly what's wrong. That's the way a lot of things go with tarantulas sometimes.
