I think its a female because of the short pectinal teeths, try to take a front shoot of the pectines (yours its kind of sided), this way it would be easier to sex your emp,

Once my emp caught a cricket and when he squeezed it with its pedipalps, all its guts and insides splattered on the glass, It was difficult to clean afterwards but it was a good show. :D
Theyre old enough to breed, you can see by the dark color of their telson, I was just wondering how old they were, but your setup looks fine to breed, as long as the humidity levels and temps are ok.
