I'm sure that they will eat anything. But why would you not just stick to the basics? There are reasons crickets and roaches and the other usual suspects are the most common feeders.
They're not difficult at all. They can be quick when they wanna be, so I wouldn't say they're the perfect beginner species, but as far temperature, humidity, feeding, etc, they're super easy. They like it dry (just a water dish), they're fine at room temperature, and they're awesome eaters...
11 Days to a Tarantula is like a few minutes to a human when it comes to food... especially after a molt. In fact, if she's a 4 year old female, you probably shouldn't even TRY to feed her until at least a week or so after a molt, as it takes a while for the fangs to harden.

Yeah they are kind all over the place...
A lot of my T's only use a small corner of their enclosure, or stay around their hide at least... I have my big female LP in a 30 gallon and she's in a different spot just about every time I come home. They're kinda notorious for not hiding.

They are hardy, they eat like crazy, the like warmth and humidity, but do just fine at room temp and humidity.
I've owned three and none were overly defensive, 2 were extremely easy going. The grow quick, they're cheap...
I can't really think of any down sides to them.
And there are also people like me who started with 6 and ended up with 3.
