Can't imagine using either of my GBB's as handleable display T's, they're spazzy and hair-kicky as heck! I would echo the suggestions of G. aureo or other docile Grammostola's. Also, I would vote Aphonopelma chalcodes as one of the most docile, chill, easy to handle T's out there.

Cooler and a hand warmer and you're good to go. This is also a lifesaver in a power outage. You can keep t's warm for days this way. Always a good idea to keep a supply of heat packs on hand just in case.
Coco fiber is a little harder for obligate burrowers to form into burrows. I think peat works better. Potting soil is largely peat as well. Make sure your sling can't get out of a KK, I'm pretty sure at 1" it could get out. A peanut butter jar (plastic) with a screw top lid works great...
