I'd definitely keep some water close by, but not eating is not out of the ordinary for these. I've red and yellow go almost a year without a meal no problem.
The enclosure too big thing is pure rubbish. Small containers help the keeper not the tarantula.
Climbing is quite common when a tarantula is moved into a new enclosure. It'll probably climb all over that one for a while too. They eventually settle down and build their preferred home. I wouldn't worry about it personally.
